Two first-half headers and a stunning late strike were enough to see off the dispirited visitors and move los Che three points clear of Sevilla and to within one of Atletico
A header from Paco Alcacer and another from Sofiane Feghouli - both in the first half - put the home side firmly in control of the encounter at the Mestalla.
And Alvaro Negredo's emphatic late strike was enough to seal maximum points for Nuno Espirito Santo's side and take them to within a point of third-placed Atletico Madrid in the Liga table.
Valencia were denied early on by the offside flag as the assistant referee deemed Alcacer to be ahead of play when he tapped in Feghouli's pass, though replays showed he was onside.
However, the home side did not take long to recover from the setback, as Alcacer met Dani Parejo's pinpoint cross with a deft glancing header which flew into the far corner on 16 minutes.
Rodrigo came close to doubling the advantage after combining well with Alcacer on the half-hour mark, but he dragged his left-footed shot wide from an angle.
Levante spurned a great chance to equalise when David Barral blazed over following a fine team move involving Tono and Victor Casadesus - and that miss would prove costly just a minute later.
Lucas Orban whipped in a fine cross from the left and Feghouli arrived right on cue to head home the hosts' second 10 minutes before the break.
Ivan Lopez almost made an immediate impact off the bench for Levante after half-time but his rasping shot dipped onto the crossbar, with Diego Alves completely beaten.
Shkodran Mustafi was denied from inside the box by Diego Marino as he prodded goalwards following a corner and Alves was called into action as Jose Mari rifled a shot which the Brazilian superbly stopped from flying into the top corner.
Joao Cancelo and Alcacer then combined well to allow the former a shot into the side netting, but Valencia were comfortably in control and in no hurry to force the issue in attack.
Alves was called into action again to deny Barral superbly before Negredo wrapped up the win with the last kick of the game.
The former Sevilla man bustled his way into space after bringing down Antonio Barragan's raking long pass before unleashing a stunning half-volley which sailed into the top left-hand corner.
Valencia are now three clear of fifth-placed Sevilla, while Levante remain in the bottom three, though they are level on points with Almeria and Deportivo directly above them.
